Broth and Beyond – Hotpot with vegetarian options in Chijmes

When you think of dining establishments in Chijmes, you know it’s going to visit an upscale and elevated experience. Broth and Beyond is one of the new entrants in the Chinese hotpot scene in Singapore. The pink flowers in the atrium as soon as you enter create an instantly welcoming vibe.
Inspired by Yunnan’s mountainous landscapes, Broth and Beyond serves hotpot with vegetarian options. The menu consists mainly of fresh ingredients ranging from vegetables, fruits, and tofu to sweet buns. They have a market table, akin to an unlimited buffet counter, where you can top-up certain ingredients which is priced at $4.99/pax.
The vegetarian broths in the menu are – Tomato Vege Broth, Tom Yum Vege Broth, Spring Water Broth. The best way is to look for the green leaf indicators on the menu. The servers also advise the table on the vegetarian options once you indicate your dietary preferences. The table is laid out in an individual hotpot setting, with a heating element on every seat. So this is slightly different than the other hotpot settings where there is a central heating element for the table which makes it more convenient for sharing.

Both the Tomato and Tom yum broths were flavored, well-seasoned and not very spicy. I did not try the spring water broth as it was on the sweeter profile and it was supposed to be water with dates.

There are a variety of vegetarian options that can be added to your bubbling hotpot. Some of the notable items are:
- Tri-Color Handcrafted noodles: Spinach, original and pumpkin
- Cheese Lava Tofu
- Chroma Tofu cubes
- Sweet potato noodles
Apart from these, you can definitely try the standard hotpot toppings like lotus stems, spinach, beancurd etc. which add their enhanced texture to the broth and make for an enjoyable experience.

The market table has some cute dessert offerings but be prepared to experience a sweetness overload. It’s an extensive counter with at least 20 options for vegetarians to add as accompaniments to your meal.
Since the space is huge, during peak hours, the service could be staggered. If you are not looking for a self-service during the course of the meal, choose a table where the waiting staff can attend to you. The price can also stack up to be steeper than other hotpot experiences, hence it is better to go at least in groups of 4-6 pax for sharing.
If you like the comfort food experience and are looking for hotpot with vegetarian options in a central location, especially till late night, then Broth and Beyond is worth visiting.
